The Magic of Ceylon Cinnamon

There are four main kinds of cinnamons in the world Saigon, Cassia, Korintje and Ceylon. Ceylon cinnamon is known as a spice for its ultra-low levels of Coumarin. If you are taking Cinnamon for health reasons, then you must and should switch to Ceylon Cinnamon. The European Food Safety Authority (EFSA) established a tolerable daily intake (TDI) of 0.1 mg/kg body weight of Coumarin in Cinnamon.  


Aside from its health benefits, Ceylon cinnamon has a unique flavour and taste that makes it an excellent addition to cooking and baking. We tried making our signature lamb shanks with both Cassia the cheapest and most common kind, and Ceylon cinnamon, the more expensive and healthy kind, and we got a significantly better result and flavour with Ceylon Cinnamon.


Sri Lanka, formerly known as Ceylon, is an island country in South Asia that lies in the Indian Ocean, southwest of the Bay of Bengal, and Southeast of the Arabian Sea. It is separated from the Indian subcontinent by the Gulf of Mannar and the Palk Strait.

Sri Lanka contains four terrestrial ecoregions: Sri Lanka lowland rain forestsSri Lanka mountain rain forestsSri Lanka dry-zone dry evergreen forests, and Deccan thorn scrub forests.[169] Flowering acacias flourish on the arid Jaffna Peninsula. Among the trees of the dry-land forests are valuable species such as satinwoodebonyironwoodmahogany and teak. The wet zone is a tropical evergreen forest with tall trees, broad foliage, and a dense undergrowth of vines and creepers. Subtropical evergreen forests resembling those of temperate climates flourish in the higher altitudes. Cinnamon originated in the central hills area in Sri Lanka. The areas are Kandy, Matale, Belihull Oya, Haputale, Horton planes and the Sinharaja forest range. At present Cinnamon, cultivation has concentrated along the coastal belt from Negombo to Matara and Kalutara, the Ratnapura area.

We source our Cinnamons from the Matara region, which is known for its highest quality Cinnamon in the world. There are different kinds of cinnamon in the world; however there is only one Ceylon Cinnamon, and that is the best one.
