Grilled Saffron Flavoured Chicken Salad
Saffron and Mixed Peppercorn Grilled Chicken Salad
with Premium Super Negin Saffron
Ingredients:
- For the Chicken Marinade:
- 4 boneless, skinless chicken breasts
- 1 teaspoon saffron threads grinded
- 1 tablespoon Turmeric Powder
- 2 teaspoons mixed peppercorns, crushed
- 3 tablespoons olive oil
- Juice of 1 lemon
- 3 cloves garlic, minced
- Salt to taste
- For the Salad:
- 6 cups mixed greens (arugula, spinach, and romaine)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 red onion, thinly sliced
- 1 avocado, sliced
- 1/4 cup feta cheese, crumbled
- Fresh herbs (like parsley or cilantro) for garnish
- For the Dressing:
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- Salt and mixed peppercorns to taste
Instructions:
- Marinate the Chicken:
- In a small bowl, steep ground saffron threads in 2 tablespoons of warm water for about 5 minutes.
- In a larger bowl, combine the saffron water, Turmeric powder, crushed mixed peppercorns, olive oil, lemon juice, minced garlic, and salt.
- Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for better flavor.
- Grill the Chicken:
- Preheat the grill to medium-high heat.
- Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for a few minutes before slicing it into thin strips.
- Prepare the Salad:
- In a large salad bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and avocado slices.
- Add the grilled chicken strips on top of the salad.
- Make the Dressing:
- In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and mixed peppercorns.
- Drizzle the dressing over the salad.
- Garnish and Serve:
- Sprinkle feta cheese and fresh herbs over the salad.
- Toss gently and serve immediately.
Helpful Tips
- Mixed peppercorns is recommended as red, greed and white peppercorns has their own flavours and their color mixes with the greens well.
- Always crush and grind Saffron threads in a mortar and pestle for better results
