Grilled Saffron Flavoured Chicken Salad

Saffron and Mixed Peppercorn Grilled Chicken Salad

with Premium Super Negin Saffron

Ingredients:

  • For the Chicken Marinade:
  • 4 boneless, skinless chicken breasts
  • 1 teaspoon saffron threads grinded
  • 1 tablespoon Turmeric Powder
  • 2 teaspoons mixed peppercorns, crushed
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • Salt to taste
  • For the Salad:
  • 6 cups mixed greens (arugula, spinach, and romaine)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 red onion, thinly sliced
  • 1 avocado, sliced
  • 1/4 cup feta cheese, crumbled
  • Fresh herbs (like parsley or cilantro) for garnish
  • For the Dressing:
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and mixed peppercorns to taste

Instructions:

  • Marinate the Chicken:
    • In a small bowl, steep ground saffron threads in 2 tablespoons of warm water for about 5 minutes.
    • In a larger bowl, combine the saffron water, Turmeric powder, crushed mixed peppercorns, olive oil, lemon juice, minced garlic, and salt.
    • Add the chicken breasts to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for better flavor.
  • Grill the Chicken:
    • Preheat the grill to medium-high heat.
    • Remove the chicken from the marinade and grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C).
    • Let the chicken rest for a few minutes before slicing it into thin strips.
  • Prepare the Salad:
    • In a large salad bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, and avocado slices.
    • Add the grilled chicken strips on top of the salad.
  • Make the Dressing:
    • In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and mixed peppercorns.
    • Drizzle the dressing over the salad.
  • Garnish and Serve:
    • Sprinkle feta cheese and fresh herbs over the salad.
    • Toss gently and serve immediately.

  • Mixed peppercorns is recommended as red, greed and white peppercorns has their own flavours and their color mixes with the greens well.
  • Always crush and grind Saffron threads in a mortar and pestle for better results
